This recipe I had for the first time on a horse ranch down in Georgia. Not only is it quick and easy, but it can easily be doubled or cut back to adjust for the appetites in your household.
Prep time: 15 minutes Cooktime: 30 minutes
Ingredients:
1 lb Boneless Skinless Chicken Breast
1 package Your Favorite Taco Seasoning
1 can Cream of Mushroom Soup
2 cups Shredded Cheddar Cheese
1/2 a cup Water
3 cups Crushed Corn Chips
Preheat oven to 350
Poached chicken breasts in 1/2 inch of water in a covered skillet
While the chicken is poaching, in a medium bowl mix taco seasoning, cheese, water and soup.
Once the chicken is cooked through, dice into 1 inch chunks.
Place chicken in an ungreased 9 X 13 inch pan, pour wet ingredients over chicken, making sure chicken is covered completely.
Sprinkle crushed corn chips over entire dish.
Bake at 350 for 30 minutes.
Serve.
I usually make saffron rice as a side for this. It's a crowd pleaser!

Daily Time Saving Tip #1
Dress for Success!
Plan your wardrobe for the following day by laying your clothes out the night before. Also, lay out all accessories, toiletries, and any necessities as well. Having these things handy and not having to hunt for them is a HUGE time saver. Remember convenience is key! Do this for all of your family members and you'll be cruising down Easy Street in no time.
You can knock 20-30 minutes off of the time it takes you to get ready in the morning just by having everything at hand!

Daily Time Saving Tip #1
Meal Time.
If you're anything like me, you barely have time to sit down and eat, let alone cook a full, healthy meal for your family (or even just yourself).
My tip of the day, prepare meals the night before, or even the week before. Do you have a day that you can actually stop and breathe for a little while? Use that day to plan out meals for the week, until the next day you have some free time.
By doing this, you can save yourself time and money on the days that you don't have time to cook. Several meals you can prepare to the point where that you just have to throw it in the oven right from the freezer when you get home and you're not spending money on the prepaid meals at stores. (Lasagne is one of those meals that can be prepared and frozen.) Even better, if you are single, you can put the meals into single serving sizes and have choices for weeks out of a full size dish! You're saving money and time!

Time Saving Tip of the Day
Make It Audio!
If you have kids your life is full. Your free time is no longer your own, it's filled with trips to the store, trips to the doctor, countless activities, and about a million other things. If you have something you need to do (i.e. study for a test, learn vocabulary words, learn a new language) make it audio. There are several ways to do this. You can get an inexpensive MP3 player (find one here, or here) if your cellphone doesn't have voice memos, (or if you don't have one), and a microphone for your computer (you can find those just about anywhere right now). Record your chapter, vocab, or load your language and you're good to go, anytime anywhere, instant study time. You can listen while you're standing in line at a store, waiting at the doctor's office, anywhere your spending time waiting.
It's proven that it's more effective to study several short time periods a day. Any "spare" time you have you have instant study time!
